Ever craving an easy meal that has a a little taste of everything? Fresh vegetables, flavorful chicken, rice, feta cheese, and tzatziki dip? Yes, please. This is a meal that I am so excited for. It is so easy and packed full of flavor. When you make this for guests, they will be more than impressed… Lets get into the recipe!
I am all about using ingredients you have in your home. Personally, if I find a recipe where I don’t already have most of the ingredients, I end up ditching the recipe. Don’t do that today! If you stick around and use more of my recipes, you WILL need these ingredients again. They are worth the investment.

- 2 Large Chicken Breasts
- Rice of choice
- Bell Pepper of choice
- Cucumber
- Red onion
- Feta Cheese
- Olive oil or avocado oil*
- Salt
- Pepper
- Garlic Powder
- Onion Powder
- Paprika
- Oregano
- Tzatziki
* You will only need this if you are cooking your chicken on a skillet.
Here is what you will need for supplies
- Cutting board
- Skillet or Grill-depending on how you would like to cook your chicken
- Knife
- Pot with Lid
- Small Mixing Bowl
- Tongs
Lets Begin!
The Chicken
Now, that we have all our food and supplies, let’s get cooking. I always start this recipe by taking out chicken from the freezer the night before or the morning of and letting it thaw out. It is best to use thawed chicken (not frozen) as the chicken will hold on to a lot more moisture and flavor.
When I am ready to begin preparing this meal, I will start by mixing up the chicken rub for this recipe. I love this chicken rub because you don’t have to marinate the chicken! As someone who has to be to work early in the morning, I find myself, rushing out the door. I. as well as you, most likely, do not have time to prepare a marinade for our chicken during the week. Let’s be real and just do a chicken rub instead!
- 1 tsp Paprika
- 1 tsp Oregano
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp salt
- Pepper to your preference
Combine the seasonings in a small bowl. Mix well. Sprinkle 1/4 of mixture onto each chicken breast side, coating. Everyone likes a different amount of seasonings. I always use the whole rub, but if it seems like too much seasonings for your liking, sprinkle to what you like.
Next you can cook the chicken on the grill or in a skillet over medium heat. I have done both and they both work well, I prefer grilled chicken as there are no dishes and the chicken is nice and juicy. If you decide to cook it on a skillet, I add 2 Tbsp of avocado oil and cook over medium to medium high heat, flipping the chicken about every 5 minutes until it reaches 165 degrees Fahrenheit. I usually cook over medium heat as my gas range can get very hot, but this will depend on the type of stove top you have.
Once the chicken is done cooking I let rest and then cut into very small pieces. This gives the dish the best texture.
The Toppings
The red onion, bell pepper, and cucumber I chop into small pieces. If you buy the 8 oz block of feta cheese, cut half of the block up into small pieces. Set aside. Mince a portion of the cucumber to be used in the tzatziki dip.
The Rice
I usually just cook 4-6 servings of whatever organic white rice I have in my pantry. It is usually 3 cups of water and 1 1/2 cups of rice. Follow the directions of the rice you have on hand.
The Tzatziki
I will have a post coming soon for my recipe for guilt-free, delicious tzatziki. It is great on top of this dish as well for dipping vegetables in. It is always a hit when I make it for friends and family and it is so easy.
Easy & Healthy Greek Bowls
Ingredients
- 2 large chicken breast cooked
- 1 bell pepper
- 1/2 red onion
- 4 oz feta cheese crumbled
- 4-5 servings white rice cooked
- 1 cup tzatziki
Chicken Rub
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 1/4 tsp pepper
Instructions
- 1. Measure and mix seasonings together for chicken rub. Add 1/4 of seasoning mixture onto each side of the 2 large chicken breasts.2. Cook the chicken on the grill or a skillet with 2 Tbsp avocado oil over medium of high heat. Cook until chicken reaches 165 degrees and then let rest.3. While the chicken is cooking, cook the white rice to the instructions on the bag. The rice I use says to bring 3 cups of water to a bowl, then add 1 1/2 cups of white rice. Cover and cook on low until water is gone and rice is fully cooked. I like to add 1 Tbsp of butter, salt, pepper, and paprika to taste to my rice, but this is completely optional.4. Next chop the red onion and bell pepper into small pieces. If using the feta cheese block, crumble into small pieces.5. Chop chicken into small pieces. I find that the large pieces throws off the texture. Small pieces allow the crunch from the chicken rub to be enjoyed.6. Assemble your bowls. Add rice at the base, 1/4 of the chopped chicken, 1/4 of the chopped red onion, 1/4 of the bell pepper, and 1/4 of the feta cheese. Add tzatziki to your hearts desire and enjoy!
