Everyone has seen the viral “Egg Roll in a Bowl” recipe. When I heard about it, I had to try it. The problem is, this viral recipe lacked any form of carb. I was looking for a recipe that not only tasted good, but also kept me full. So here comes my take on the much loved “Egg Roll Bowls.”

This recipe is tried and true. Trust me, I make it at least once a week. It is delicious and also makes great leftovers. It uses ingredients you most likely already have around. If you don’t, these are ingredients you can use again and again. The sauce is also made from scratch, versatile, and free of seed oils. It is my Stir Fry Sauce recipe that is posted on my blog. - Grill (optional)

Ingredients You Will Need
- Jasmine Rice
- Chicken
- Broccoli Slaw
- Coconut Aminos
- Ground Ginger
- Garlic Powder or Minced Garlic
- Avocado Oil
- Honey
- Red Pepper Flakes
- Salt
- Pepper
How to Make Egg Roll Bowls
The Chicken
For this recipe I use two large chicken breasts. Season the chicken to your liking. I sprinkle salt, pepper and garlic powder on each side of the chicken breast and then grill them on medium-high heat. Then grill for about 5 minutes, flip, and grill until the chicken reaches 165 degrees Fahrenheit. Then chop cooked chicken into bite size pieces that will be added to the egg roll bowl mixture.
The Rice
I use organic jasmine rice and boil 3 cups of water and add 1 1/2 cups of rice. Cover the pot and reduce to a simmer. Cook until rice is tender and water is cooked out. The rice should be soft and fluffy.
The Vegetables
I love adding vegetables to meals to add nutrients and density. This meal is so easy and does just that. All you will need is half a medium onion, sliced thinly and a bag of broccoli slaw. That’s it. Add the vegetables to a preheated pot with some avocado oil and saute until tender.
The Sauce
The sauce I use is the “Homemade Stir Fry Sauce” you can find posted on my blog. I use this in many of my rice and noodle dishes.
The Easiest Viral Egg Roll Bowl

Ingredients
- Rice Ingredients
3 cups water
1 1/2 cup of jasmine rice, uncooked
- Egg Roll Bowls
2 chicken breasts, cooked
1 16 oz bag of broccoli slaw
1/2 medium sized onion sliced
2 Tbsp avocado oil
Directions
- Season the chicken to your liking. Sprinkle salt, pepper and garlic powder on each side of the chicken breast and then grill them on medium-high heat. Grill for about 5 minutes, flip, and grill until the chicken reaches 165 degrees Fahrenheit. Then chop cooked chicken into bite size pieces.
- Boil 3 cups of water and add 1 1/2 cups of rice. Cover the pot and reduce to a simmer. Cook until rice is tender and water is cooked out. The rice should be soft and fluffy.
- Slice half a medium sized onion into thin slices.
- While the rice and chicken are cooking, heat a large pot to medium-high heat. Add 2 Tbsp of avocado oil. Then add the bag of broccoli slaw and onion to heated pan. Saute until the slaw and onions are tender.
- Mix “Homemade Stir Fry Sauce” in a mixing bowl. Set aside.
- Add cooked chicken, cooked rice, and “Homemade Stir Fry Sauce” to the pot of tender slaw and onion. Mix until full combined. Simmer on medium-low heat until the sauce thickens and the ingredients are fully coated with the sauce. Enjoy!
